PULLULANASE
INTRODUCTION
Pullulanase is produced from excellent strain of Bacillus licheniformis through submerged
fermentation and extraction techniques. It can be widely used for industries of beer, starch
sugar, monosodium glutamate and ethanol, etc..
Pullulanase is a kind of heat stable debranching enzyme (starch α-1,6-glucosidase) which can
be applied in low pH condition and hydrolyze the α-1,6-D-glucoside bond for producing linear
polysaccharides which contains 1,4-α-D-linear chain. It can closely cooperate with other
enzymes, e.g. glucoamylase and fungal amylase, and efficiently act onto amylopectin as a
result of faster reaction speed and higher yield of glucose and maltose.

1 unit of Pullulanase activity equals to the amount of enzyme which can hydrolyze the pullulan
polysaccharides to get 1mg of reducing sugar (based on glucose) at 60℃ and pH4.5 in 1 min.
